Recipe: Taco salad

I’ve always said that I fancy myself as a bit of a chef, so here’s what I cooked up last night which was delicious and very healthy.

Meat mixture

350g of pork mince
1 can of diced tomatoes
1 small onion
1 capsicum
Masterfood Smokey Barbecue Seasoning

Stir fry onion and capsicum until soft. Add mince and stir fry until no pink remains. Add tomatoes and several healthy shakes of seasoning, turn down heat and leave to simmer.

To go with the meat, diced up some lettuce and fresh tomatoes, grate some cheese.

I also made some homemade guacamole by mashing an avocado, and adding some lemon juice and chilli & lime seasoning.

Once the meat mixture has simmered for about 20 minutes, add about half the mixture to your plate, top with all the sides and enjoy.

Both my wife and I really enjoyed this last night, I hope you do too.
